Once it’s cooked, seitan roast can be sliced and served in a variety of ways. It makes a delicious centerpiece for a holiday dinner or special occasion, but it’s also a great option for everyday meals. Serve it with your favorite sides, like cooked or roasted vegetables, mashed potatoes, or gravy, and enjoy the hearty, savory flavors of this delicious dish.

Ingredients
- Dry ingredients
430 g wheat gluten
120 g wholemeal flour
30 g nutritional yeast
2 tbsp onion powder
1 tbsp garlic powder
2 tbsp smoked paprika powder
1/2 tsp salt
1/4 tsp pepper
1 tsp ground cumin
1 tsp oregano
2 pinches ground coriander
1 tbsp ground dry sage
- Wet ingredients
1 cube vegetable stock (optional)
2 tbsp tamari sauce
2 tbsp liquid smoke (optional)
3 tbsp tomato concentrate
- Coating
to taste tomato sauce
Directions
- Preheat the oven to 350 °F (180 °C)
- Mix the dry ingredients separately in a large bowl and the wet ingredients in a medium bowl.
- Add the wet ingredients to the dry ingredients and knead for about 5 minutes.
- Form into a loaf and place on a baking tray to rest for 20 minutes.
- After 20 minutes, brush the roast with tomato sauce, cover with aluminium foil and place in the oven for 90 minutes.
- After 90 minutes, uncover the roast and bake uncovered at 420 °F (220 °C) for a further 20 minutes.
- Transfer the roast, still hot, to an airtight container until serving.
Notes
- This seitan roast goes great with our bread dumplings and mushroom gravy.
