Pick the substitute by the job the egg was doing. For cakes, muffins and cookies, our pick is Bob’s Red Mill Gluten Free Egg Replacer, 1 Tbsp with 2 Tbsp water per egg. For meringue, whip the liquid from a can of chickpeas. For a scramble, pour Just Egg. Bob’s says its own powder won’t scramble or make a meringue.
Just Egg’s product page sets out six badges, among them plant-based, no cholesterol and “No bird flu”. They all describe what’s in the bottle. The maker’s allergen chart, last updated on September 2, 2026, adds what the badges leave out. Egg is not in Just Egg, but it runs on the shared equipment that makes it, and soy, wheat and sesame do too. Milk and fish are in the same facility. Just says that when equipment is shared it tests every batch for traces of egg, and that nothing ships until the tests are done. For a vegan, that is a note about the factory, not about the recipe. The Vegan Society’s trademark standard requires equipment to be cleaned before a vegan run, permits up to 100 ppm of animal-based contamination, and says plainly that its mark is not an allergen certification. For a guest with an egg allergy the chart is the part that matters, and the same goes for the allergen line on every pack below. Our guide to reading a food label shows where to find it.
Which substitute for which job, and how much per egg
Every amount comes from a maker’s own page or guide, for one egg unless the row says otherwise; the aquafaba amounts are Bob’s Red Mill’s.
| The egg’s job | Substitute | Per egg | Maker’s wait |
|---|---|---|---|
| Bind and lift cakes, muffins, cookies, quick breads | Bob’s Red Mill Gluten Free Egg Replacer | 1 Tbsp powder, 2 Tbsp water | 1 minute |
| One white or one yolk in a batter | Bob’s Red Mill Gluten Free Egg Replacer | White: 1 1/2 tsp, 2 Tbsp water. Yolk: 1 1/2 tsp, 1 Tbsp water | 1 minute |
| Whipped whites, meringue | Liquid from Eden Organic Garbanzo Beans | 2 Tbsp per white, 3 per whole egg, 1 per yolk | None given |
| Bind a bake | Bob’s Red Mill Organic Golden Flaxseed Meal | 1 Tbsp meal, 3 Tbsp water | About 5 minutes |
| Bind a bake | Navitas Organics Chia Seeds | 1 Tbsp seeds, 3 Tbsp water | 10 to 15 minutes |
| Body in a bake | Mori-Nu silken tofu, puréed | 5 Tbsp | None given |
| Scramble, omelet, French toast | Just Egg | No per-egg figure; a serving is 3 Tbsp (46 g) | None |
| An egg for a sandwich | Just Egg Folded | 1 piece (57 g) | None |
| Sliced hard-boiled egg | Crafty Counter WunderEggs | Sold hard-boiled | None |
| Bind a bake | Judee’s Vegan Egg Replacer Mix | 1 part powder to 4 parts water, no per-egg amount | None given |
Bob’s numbers don’t quite add up. Make a white and a yolk separately and you’ve used 3 tsp of powder, which is the same tablespoon the whole-egg line asks for, but 3 Tbsp of water instead of 2 (our arithmetic). Bob’s doesn’t say why. Use the whole-egg line unless the recipe really does split the egg.
The waits run from 1 minute for Bob’s powder to 10 to 15 for Navitas chia. If the recipe uses chia, mix it before you weigh anything else.
Cooking for someone who can’t eat eggs
Egg is one of the 9 major food allergens the FDA lists, and a US food label has to name the food source of any ingredient that is one. That rule is about ingredients. The shared-equipment line on Just Egg comes from Just’s own chart, and its ingredient list on the same site names no egg.
Some swaps here bring an allergen of their own. Mori-Nu’s Extra Firm says “Contains Soy”. WunderEggs list almonds, cashews and coconut milk right after water. Navitas packs its seeds in a facility that also handles common allergens and doesn’t name which ones on the product page. Bob’s makes its egg replacer in a dedicated gluten-free facility, and Judee’s calls its own facility dedicated and allergy-conscious; neither product page we read names egg either way.
Before you bake for someone with an egg allergy, read the allergen line on the pack you actually bought, and ask the guest what else they avoid. A cake can be egg-free and still full of cashews.
Nine egg substitutes, product by product
Bob’s Red Mill Gluten Free Egg Replacer
Our pick for baking, and a short list: potato starch, tapioca flour, baking soda and psyllium husk fiber. Bob’s sells it for muffins, cakes, cookies, quick breads and pancakes, counts a bag as 34 eggs, and is the only powder here with separate amounts for a white and a yolk.
The catch is the sodium. One tablespoon carries 320 mg, so a three-egg cake picks up 960 mg from the replacer alone (our arithmetic). If you’re baking for someone watching salt, count it.
Don’t buy it for anything you’ll eat as egg. Bob’s own page rules out the scramble and the meringue, and admits the powder is “not magic”, which is more modesty than most product pages manage.
Eden Organic Garbanzo Beans (for the aquafaba)
The can to open for meringue. Eden lists organic garbanzo beans, water and kombu seaweed, adds no salt, and describes the cooking water in the can as aquafaba, an egg replacer for meringues and marshmallows. A 15 oz can was $3.25 on Eden’s store in November 2026.
Bob’s guide to aquafaba gives the amounts for unwhipped liquid: 1 Tbsp per yolk, 2 per white, 3 per whole egg. It whips the liquid to medium peaks with a mixer, and suggests canned chickpeas over home-cooked for consistent results the first time. You’re buying chickpeas for the water, so dinner arrives as a by-product.
Skip it for anything served unbaked. The same guide says the liquid smells and tastes slightly of beans until it’s baked.
Just Egg
Water and mung bean protein lead the list, then expeller-pressed canola oil, with garlic and onion further down. A 3 Tbsp serving has 60 calories and 5 g of protein, and the recipes on the page are a frittata, an omelette, a scramble and French toast. Its scramble directions call for a pan lightly coated with butter or oil. We’d take the oil.
The garlic and onion are fine in a frittata and an odd guest in a sponge cake, and the page gives no per-egg amount for baking. Read the chart in the second paragraph of this page before you buy it for an egg-allergic guest.
Bob’s Red Mill Organic Golden Flaxseed Meal
One ingredient, organic whole golden flaxseed. The flax egg is 1 Tbsp of meal and 3 Tbsp of water, left for about 5 minutes; double it for two eggs. The same recipe takes Bob’s regular flaxseed meal.
Its weakness is range. Bob’s offers it to replace one whole egg and gives no version for a white or a yolk. If your recipe asks for 2 yolks, go back to the powder.
Navitas Organics Chia Seeds
Navitas gives the longest wait of any maker here, 10 to 15 minutes for 1 Tbsp of seeds stirred into 3 Tbsp of water. The bag holds certified organic chia seed and nothing else. Navitas listed the 8 oz bag at $7.99 and the 16 oz at $12.99 in November 2026. Why the seed gels at all, and how other bags compare, is in our chia seed hub.
Not the one to reach for once the oven is already hot.
Mori-Nu Silken Tofu Extra Firm
Mori-Nu’s tips page puts 5 Tbsp of puréed silken tofu at one egg, and suggests mashed Extra Firm in place of the eggs in a quiche. The tofu itself is water, soybeans, soy protein isolate, glucono-delta-lactone and calcium chloride, in a package that needs no fridge until it’s opened.
One package purées to 1.25 cups, about 4 eggs’ worth at 5 Tbsp each (our arithmetic). For recipes that call for milk or buttermilk, the same page has a baking blend, the whole package blended with 1 cup of water and 2 Tbsp of lemon juice or white vinegar, which keeps a week in the fridge. It’s soy, so it’s out for a soy allergy. If you’re new to it, our tofu hub covers the rest of the range.
Just Egg Folded
Just sells Folded as eggs you can put in the toaster, at 57 g and 80 calories a piece. The list adds corn starch, baking powder and transglutaminase to the mung bean base. Just’s chart lists egg on the shared equipment for Folded as well, and milk there too.
It does one job, and baking isn’t it. For that, buy the bottle.
Crafty Counter WunderEggs
For the egg salad sandwich. Water, almonds, cashews and coconut milk make up the bulk, with agar, konjac, yeast and turmeric among the smaller ingredients. Crafty Counter lists a tray at $7.99 and ships Monday to Wednesday with ice packs.
Leave them off the table for a guest with a tree-nut allergy. Crafty Counter’s own contains line names coconut, almonds and cashews.
Judee’s Vegan Egg Replacer Mix
The directions say 1 part powder to 4 parts water and stop there, so you work out the amount per egg yourself. Judee’s adds that the mix won’t make scrambled eggs. Inside are potato starch, tapioca starch, baking soda, cellulose gum and cream of tartar. An 8 oz pouch was listed at $12.74 and sold out on Judee’s store when we checked in November 2026.
Judee’s also sells dried egg powders, whole egg among them, and the vegan mix’s own page suggests buying whole egg powder and egg yolk powder with it. Thorough, if not quite the point. Anyone who wants a measured amount per egg is better served by Bob’s.
Bob’s powder is the wrong pick only when the egg has to be whipped or eaten as egg. Whip the chickpea liquid for the first, pour Just Egg for the second, and if the same recipe wants butter, our baking without butter guide has the fat and water for each swap.
