Ingredients

  • 1000 g sour turnip

  • 1 medium onion

  • 2 cloves chopped garlic

  • 1 pinch thyme and rosemary

  • 1 piece bay leaf

  • 1 can cooked beans

  • 2 tbsp onion powder

  • 1 tbsp garlic powder

  • 3 tbsp nutritional yeast

  • 200 ml plant-based cream (for cooking)

  • to taste salt and pepper

  • 2 tbsp starch (if you want a thicker consistency)

Directions

  • Fry the chopped onion and garlic in water or oil. Add the thyme and rosemary and the bay leaves.
  • When the onions are golden and the garlic is fragrant, add the sour turnip. If the turnip is too salty, rinse it under water beforehand.
  • Add just enough water to the pot with the turnips to cover them and cook until the turnips are tender.
  • When the turnips are cooked, add the cooked beans.
  • If the consistency is too thin, add the starch which has been mixed with a little water.
  • Add the remaining spices and the cream to the turnip. Mix well and remove from the heat.
  • For a fuller flavor, sprinkle a pinch of fried onion over the turnips.
  • The sour turnip with cream goes perfectly with boiled potatoes and roasted vegan sausages. You can swap potatoes for rye bread.
