Ingredients
1000 g sour turnip
1 medium onion
2 cloves chopped garlic
1 pinch thyme and rosemary
1 piece bay leaf
1 can cooked beans
2 tbsp onion powder
1 tbsp garlic powder
3 tbsp nutritional yeast
200 ml plant-based cream (for cooking)
to taste salt and pepper
2 tbsp starch (if you want a thicker consistency)
Directions
- Fry the chopped onion and garlic in water or oil. Add the thyme and rosemary and the bay leaves.
- When the onions are golden and the garlic is fragrant, add the sour turnip. If the turnip is too salty, rinse it under water beforehand.
- Add just enough water to the pot with the turnips to cover them and cook until the turnips are tender.
- When the turnips are cooked, add the cooked beans.
- If the consistency is too thin, add the starch which has been mixed with a little water.
- Add the remaining spices and the cream to the turnip. Mix well and remove from the heat.
- For a fuller flavor, sprinkle a pinch of fried onion over the turnips.
- The sour turnip with cream goes perfectly with boiled potatoes and roasted vegan sausages. You can swap potatoes for rye bread.
