From the jubilant streets of Venice to the vibrant parades of Cologne, these vegan carnival doughnuts are synonymous with joy, laughter, and of course, indulgence.

Imagine biting into a golden, crisp exterior that gives way to a fluffy, melt-in-your-mouth interior. Now add a dusting of powdered sugar, a hint of vanilla and a surprise fruit jam filling – sounds like a dream, doesn’t it?

Ingredients

  • 500 ml lukewarm plant-based drink

  • 4 tbsp coconut sugar

  • 1/2 tsp vanilla pod

  • 2 cubes fresh yeast

  • 1000 g strong white bread flour

  • 1 tsp salt

  • 12 tbsp aquafaba

  • 3/4 tsp turmeric

  • 1 zest lemon

  • 6 tbsp rum

  • 100 ml vegetable oil

Directions

  • In a deep cup, mix plant-based drink, sugar, vanilla, yeast and 2 teaspoons of flour taken from 1000 g of flour and place in a warm place to allow the yeast to react.
  • Meanwhile, sift the flour and turmeric into a large bowl and make a well in the centre for the yeast.
  • Sprinkle salt around the edge of the flour.
  • Pour the yeast into the well and stir it into the flour. Add the remaining ingredients.
  • Knead the ingredients by hand for 30 minutes or 10 minutes with a hand mixer (dough hooks). The dough should be soft and airy and should come away from the bowl and the hands or hooks.
  • With wet hands, form an 80 g ball. Roll it between the palms of your hands until it forms a nice smooth ball, which you place on baking paper or a damp cloth.
  • Cover the ball formed doughnuts with a clean cloth and place them in a warm place to rise for at least 20 minutes.
  • Fry the doughnuts in hot vegetable oil. When frying the doughnuts, always carefully lower the top side into the fat:
    a) In a fryer at 300°F (150°C), fry for 4 minutes on each side.
    b)On the stove in a deep pan at 340°F (170°C). When the doughnuts are in the oil, cover them with a lid. After approx. 2 minutes, turn over and fry for a further 2 minutes with the pan open.
    c) For a healthier version, bake the doughnuts in the oven at 355°F (180°C). The doughnuts are baked after 12 – 15 minutes.
  • Remove the fried or baked doughnuts from the dish or oven and place them on paper towels.
  • Use a doughnut syringe to inject the jam into the slightly cooled doughnuts.
  • Finally, sprinkle with icing sugar and serve.
