Bread dumplings are a beloved classic in Central European cuisine, with a history dating back centuries.

Imagine biting into a soft, pillowy ball of bread that’s been soaked in almond drink and seasoned with fragrant herbs like parsley and chives. The subtle flavors of the dumpling are the perfect match for rich and flavorful gravies, like a creamy mushroom sauce.

And the best part? Bread dumplings are incredibly easy to make! All you need is some stale bread or rolls, almond or other plantbased drink, starch, and a few choice seasonings. You’ll have a dish that’s both comforting and filling, perfect for those chilly nights when you need something hearty to warm you up.

Ingredients

  • 300 g old bread or rolls

  • 6 tbsp aquafaba (chickpea brine)

  • 1/4 tsp turmeric

  • 300 ml plant-based drink (almond, oat, soy, etc.)

  • 1 tbsp parsley

  • 3 tbsp chives

  • 1 tsp marjoram

  • 2 tbsp onion powder

  • 1 tsp garlic powder

  • 3 tbsp flour or cornstarch

  • to taste salt

  • to taste pepper

Directions

  • Cut the bread into small cubes and place them in a large bowl.
  • In another bowl, mix the remaining ingredients, except the flour, with a whisk.
  • Pour the resulting mixture over the bread and, using a salad bowl or a spatula, mix well to moisten all the bread cubes.
  • Leave the bread to rest until it is soft and soaked in the plant-based drink mixture.
  • Meanwhile, put a large pot of salted water on the stove.
  • Stir the flour into the bread mixture and, with wet hands, form the dough into dumplings. You can use ice cream scoop to help you shape the dumplings.
  • When the water comes to the boil, place the bread dumplings in the water and cook over a moderate heat for about 10 minutes. When cooking, be careful not to boil too much or too little water, as the dumplings may fall apart.
